from grounds to bloom

Bloom.  Thinking flowers, blossoms or growth? I suppose similar in coffee lingo.  Its one of my favorite java terms and a unique step in the brewing process.  The bloom happens when hot water is added to coffee grounds at the beginning of the brew.   The combination of the two releases the gases from the the bean and replaces it with the water to cause the grounds to bubble and expand.  The prettiest, creamiest shades of tans and browns layer upon themselves in the heap of grounds and are the beginning of a perfect brew.
